2-Ingredient Banana Oat Cookies

Got some spotty bananas? Let’s turn them into the easiest, healthiest cookies you’ll ever make! These 2-ingredient wonders are my go-to when the sweet tooth strikes but I want to keep things wholesome.

They’re naturally sweet, perfectly chewy, and so simple that my kitchen-challenged friends nail them every time. Once you try these, those overripe bananas will never go to waste again!

Variations & Substitutions

You can jazz them up with chocolate chips, chopped nuts, or dried fruits. For a protein boost, try adding a scoop of protein powder or a dollop of peanut butter.

My personal favorite is adding shredded coconut and dark chocolate chips. You can even turn them into thumbprint cookies by making an indentation and filling it with jam before baking.

Tips & Tricks for Perfect Results

Here’s my secret to amazing results: use super ripe bananas – the ones that look almost too far gone are perfect! If your bananas reach peak ripeness before you’re ready to bake, just peel and freeze them.

Let the oat mixture rest for those full 5 minutes – it makes a huge difference in texture. The cookies don’t spread much during baking, so shape them exactly how you want them to look in the final product.

Making the Recipe Stand Out

Try adding warming spices like cinnamon, cardamom, or pumpkin pie spice. For extra nutrition, I love sprinkling in some chia seeds or ground flaxseed.

Storage & Reheating

Here’s something interesting – these cookies actually get better with time! They become softer and sweeter after sitting for a few hours.

Store them in an airtight container at room temperature for up to 2 days, or pop them in the fridge where they’ll last for a week.

They’re delicious cold, but I sometimes warm them up for 10 seconds in the microwave for that fresh-baked feeling.
