Baked Ziti with Cottage Cheese
There’s something deeply satisfying about a big pan of baked ziti fresh out of the oven — cheese golden on top, sauce bubbling at the edges, and that incredible smell filling your whole kitchen.
Using cottage cheese instead of ricotta gives it a surprisingly light, creamy texture that holds up perfectly to the hearty meat sauce. Leftovers the next day? Even better.

Variations & Substitutions
Swap the ground beef for Italian sausage — hot, mild, or a mix of both — for a deeper, spicier flavor profile. Ground turkey or ground pork work great here too if you want to change things up without losing that savory richness.
If you prefer a smoky twist, add diced pepperoni or crumbled bacon right into the meat sauce. You can also swap the marinara for a vodka sauce or arrabiata if you like a little heat. Penne or rigatoni are solid swaps for the ziti if that’s what you have on hand.
Tips & Tricks for Perfect Results
The most important thing you can do is pull the pasta out of the boiling water a minute or two before it’s fully cooked. Since it bakes in the oven with all that sauce, it continues cooking and will turn mushy if you start with fully cooked noodles.
Full-fat cottage cheese gives you a richer, creamier texture than low-fat versions. Always let the baked ziti rest after it comes out of the oven — this helps everything set up so you get clean, gorgeous scoops instead of a soupy mess on the plate.

Serving Suggestions
Baked ziti is a hearty, filling dish that pairs well with a crisp Caesar salad or a simple green salad tossed with Italian vinaigrette. Garlic bread or a crusty baguette on the side is a requirement — you’ll want something to scoop up every last bit of that saucy goodness.
For a crowd-friendly spread, serve it alongside roasted broccoli or sautéed zucchini. A glass of medium-bodied red wine like Chianti or Montepulciano makes this a full Italian-inspired dinner experience that feels special without requiring a lot of extra effort.
Equipment Needed
You only need a handful of basic kitchen tools to pull this recipe off without a hitch.
- Measuring cups and spoons
- 9×13-inch baking dish
- Large pot for boiling pasta
- Large skillet or sauté pan
- Colander or strainer
- Mixing bowl (medium or large)
- Wooden spoon or spatula
- Aluminum foil

Prep Ahead Tips
You can assemble the entire dish up to 24 hours in advance, cover it tightly with foil, and keep it in the refrigerator until you’re ready to bake. If baking straight from the fridge, add about 10 extra minutes to the covered baking time.
The meat sauce can also be made up to three days ahead and stored in an airtight container. Cooking the pasta the day before and tossing it lightly with olive oil to prevent sticking is another great time-saver on busy weeknights.
Budget Tips
Baked ziti delivers serious flavor without draining your wallet. A pound of ground beef or Italian sausage is usually one of the more affordable proteins at the grocery store, especially if you buy it in bulk and freeze portions.
Cottage cheese is significantly cheaper than ricotta and works just as well — sometimes even better for texture. Buying block mozzarella and shredding it yourself is cheaper than pre-shredded bags and melts much more smoothly.
Storage & Reheating
Leftovers keep well in an airtight container in the refrigerator for up to 4 days. To reheat individual portions, microwave on medium power in 60-second intervals, stirring between each, until heated through — this prevents the pasta from drying out or getting rubbery.
For larger portions, cover with foil and warm in a 350°F oven for 20–25 minutes. This dish is also freezer-friendly; freeze in individual portions or as a whole dish (tightly wrapped) for up to 3 months. Thaw overnight in the fridge before reheating for best results.
Baked Ziti with Cottage Cheese

Ingredients
- 12 oz ziti pasta
- 1 lb ground beef or Italian sausage
- 2 cups cottage cheese full-fat recommended
- 2 cups shredded mozzarella divided
- ½ cup grated Parmesan cheese
- 1 jar 24 oz marinara sauce
- 1 egg
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish optional
Instructions
- Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
- Cook ziti according to package directions until just al dente — it’ll finish cooking in the oven, so don’t overdo it. Drain and set aside.
- In a large skillet over medium heat, brown the ground beef or sausage, breaking it up as it cooks. Drain any excess fat, then stir in the marinara sauce. Let it simmer for about 5 minutes.
- In a mixing bowl, combine the cottage cheese, egg, garlic powder, Italian seasoning, salt, pepper, and half of the mozzarella. Stir until everything is well mixed.
- Add the cooked pasta to the cottage cheese mixture and toss to coat evenly.
- Spoon half of the meat sauce into the bottom of your prepared baking dish. Layer the pasta mixture on top, then pour the remaining meat sauce over everything.
- Sprinkle the remaining mozzarella and all of the Parmesan over the top.
- Cover with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes until the cheese is golden and bubbly.
- Let it rest for 5–10 minutes before serving. Dig in!
