Buffalo Chicken Lettuce Wraps

Ingredients
- 2 cups cooked chicken breast shredded (rotisserie chicken is great)
- 1/3 cup Buffalo wing sauce
- 2 tablespoons ranch or blue cheese dressing
- 1 tablespoon unsalted butter melted
- 1/2 cup shredded carrots
- 1/2 cup finely diced celery
- 1/4 cup crumbled blue cheese optional
- 8 large butter lettuce leaves or romaine
- Chopped chives or green onions for garnish
Instructions
- In a large bowl, combine the Buffalo wing sauce and melted butter.
- Add shredded chicken to the sauce, tossing until every piece is coated.
- Lay out the lettuce leaves. Fill each with a generous scoop of Buffalo chicken. Top with carrots, celery, a drizzle of ranch or blue cheese dressing, and crumbled blue cheese if you like.
- Sprinkle with chives or green onions. Grab, fold, and enjoy!
