Air Fryer Garlic Butter Mushrooms

My kitchen always smells incredible on the nights I make these, and that alone is reason enough to add them to your weekly lineup.

Garlic butter mushrooms in the air fryer are one of those recipes that feel far fancier than the effort involved — 15 minutes, a handful of pantry staples, and you’ve got golden, caramelized mushrooms that upstage almost every dish they’re served alongside.

Variations & Substitutions

Swap the butter for ghee if you want a slightly nuttier, richer flavour with a higher smoke point — it works beautifully here. You can also use baby bella mushrooms, portobello caps (sliced thick), or even king oyster mushrooms for a meatier bite.

For extra heat, stir a pinch of red pepper flakes or a dash of cayenne into the butter mixture. Fans of bold flavour can add a splash of Worcestershire sauce or soy sauce to deepen the umami profile without overpowering the garlic butter base.

Tips & Tricks for Perfect Results

Don’t overcrowd the basket! Mushrooms release moisture as they cook, and piling them on top of each other creates steam instead of that gorgeous golden sear. Cook in batches if your air fryer is on the smaller side.

Also, pat your mushrooms dry before tossing them in the butter — excess moisture will prevent caramelization. Shaking the basket halfway through ensures even browning on all sides. Fresh garlic beats garlic powder here every time for flavor depth.

Serving Suggestions

These mushrooms are incredible piled over a thick, pan-seared steak or a juicy pork chop for a restaurant-worthy plate at home. Spoon them over creamy mashed potatoes or a bowl of cheesy polenta for pure comfort food.

They’re also great as a rich topping for grilled chicken breasts or a side alongside roasted salmon. For an indulgent appetizer, serve them in a small cast iron skillet with crusty bread for dipping — the garlic butter sauce pooled at the bottom is absolutely worth mopping up.

Equipment Needed

You don’t need much beyond the basics to pull this recipe off perfectly.

  • Tongs or silicone spatula for tossing
  • Air fryer (basket-style or oven-style both work)
  • Large mixing bowl
  • Whisk or fork
  • Cutting board and knife
  • Measuring spoons

Prep Ahead Tips

You can mix the garlic butter sauce up to 3 days in advance and store it in an airtight container in the fridge — just give it a quick reheat and stir before tossing with the mushrooms. The mushrooms themselves can be cleaned and halved the night before; store them in a paper towel-lined container in the fridge to absorb extra moisture.

Avoid pre-tossing the mushrooms in the butter mixture ahead of time, as the salt will draw out too much moisture and make them soggy before they even hit the air fryer.

Budget Tips

Mushrooms are one of the most wallet-friendly produce items year-round, typically running around $2–$4 per pound depending on the variety. Stick with button or cremini mushrooms for the best price-to-flavor ratio — they’re widely available and consistently affordable.

Buying in bulk from warehouse stores like Costco can cut costs significantly if you’re meal prepping for the week. Frozen minced garlic from a jar is a budget-friendly swap for fresh cloves and cuts down on prep time too. Dried parsley works fine in place of fresh for garnish.

Storage & Reheating

Store leftover mushrooms in an airtight container in the refrigerator for up to 3 days. They will soften slightly as they sit, which is totally normal. To reheat, pop them back into the air fryer at 350°F for 3–4 minutes to revive some of that golden texture.

These mushrooms are not ideal for freezing since mushrooms have a high water content and tend to turn mushy once thawed. Best enjoyed fresh or within a couple of days for peak texture and flavor.

  • 4 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley chopped (for garnish)
  • Optional: 2 tbsp grated Parmesan cheese

Instructions

  • Preheat your air fryer to 375°F (190°C) for 3 minutes.

  • Toss the halved mushrooms in the garlic butter mixture until every piece is well coated.
  • Arrange mushrooms in a single layer in the air fryer basket. Work in batches if needed — crowding them will steam rather than crisp them.

  • Transfer to a serving plate, sprinkle with fresh parsley and Parmesan (if using), and serve immediately.
