Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 1/4 cup water
  • 2 cups cooked rice white, brown, or cauliflower
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 avocado diced
  • Fresh cilantro lime wedges, and sliced jalapeños for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the onion and cook until soft, about 3 minutes. Stir in garlic and cook for 30 seconds.
  • Add ground turkey, breaking it up with a spoon. Cook until browned, about 5-6 minutes.
  • Sprinkle taco seasoning over the turkey. Pour in water and stir to coat. Simmer for 2-3 minutes until thickened.
  • Start with a scoop of rice in each bowl. Top with turkey mixture, black beans, corn, tomatoes, lettuce, cheese, sour cream, and avocado.
  • Garnish with cilantro, lime, and jalapeños.
