Hard-Boiled Egg and Avocado Toast

Ingredients

  • 2 slices whole wheat bread
  • 1 ripe avocado
  • 2 large eggs
  • 2 teaspoons butter or flaxseed oil
  • Kosher salt and freshly ground black pepper
  • Optional toppings: red pepper flakes everything bagel seasoning

Instructions

  • Place eggs in a pot of water and bring to a boil. Once boiling, cook for 10-11 minutes, then transfer to an ice bath to cool.
  • While eggs cool, toast your bread slices until golden brown and spread with butter or drizzle with oil.
  • Peel and pit the avocado, then mash it in a bowl. Season with salt and pepper to taste.
  • Spread the mashed avocado evenly on your toasted bread.
