Variations & Substitutions
You can swap the peanut butter for almond, cashew, or sunflower seed butter for different flavor profiles. The jam layer is totally customizable – try raspberry, strawberry, grape, or mixed berry.
For added protein, incorporate chopped nuts or seeds into the oat mixture. If you need these gluten-free, simply use a 1:1 gluten-free flour blend instead of whole wheat flour.

Tips & Tricks for Perfect Results
Make sure to really pack down that bottom layer firmly – this prevents crumbling later. Let the bars cool completely before cutting – I mean completely! I like to refrigerate them for a few hours first for clean, neat cuts.
Don’t skip lining the pan with parchment paper, as it makes removal so much easier. For the best texture, use old-fashioned rolled oats rather than quick oats.

Making the Recipe Stand Out
I like using natural peanut butter for a more robust nutty taste. Adding a touch of cinnamon brings warmth and depth to the bars.
For an extra special touch, try swirling additional peanut butter on top before baking, or drizzle with melted dark chocolate after cooling. Using homemade jam or preserves can also elevate these from good to absolutely amazing.
Storage & Reheating
These breakfast bars keep beautifully when stored properly. Place them in an airtight container and they’ll stay fresh at room temperature for up to 4 days. For longer storage, refrigerate for up to a week or freeze for up to three months.
If freezing, I recommend cutting them into individual portions first and separating layers with parchment paper. To reheat, simply let them thaw at room temperature, or give them a quick 15-second zap in the microwave if you prefer them warm.
Peanut Butter and Jelly Breakfast Bars

Ingredients
- 2 cups rolled oats
- 1/4 cup honey
- 1/4 cup peanut butter
- 1/4 cup whole wheat flour
- 1/4 cup milk
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 2/3 cup jam your favorite flavor
Instructions
- Preheat oven to 350°F and line an 8×8-inch pan with parchment paper
- Place oats in a food processor and pulse until coarsely ground
- Warm honey and peanut butter in microwave for 15 seconds
- Mix ground oats with remaining ingredients except jam until dough forms
- Press 2/3 of dough into prepared pan
- Spread jam evenly over the base
- Crumble remaining dough over jam layer
- Bake for 25-30 minutes until golden
- Cool completely before cutting
