Peanut Butter and Jelly Breakfast Bars

These bars strike the ideal balance between chewy oats, creamy peanut butter, and sweet-tart jam.

Peanut Butter and Jelly Breakfast Bars

Ingredients

  • 2 cups rolled oats
  • 1/4 cup honey
  • 1/4 cup peanut butter
  • 1/4 cup whole wheat flour
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 2/3 cup jam your favorite flavor

Instructions

  • Preheat oven to 350°F and line an 8×8-inch pan with parchment paper
  • Place oats in a food processor and pulse until coarsely ground
  • Warm honey and peanut butter in microwave for 15 seconds
  • Mix ground oats with remaining ingredients except jam until dough forms
  • Press 2/3 of dough into prepared pan
  • Spread jam evenly over the base
  • Crumble remaining dough over jam layer
  • Bake for 25-30 minutes until golden
  • Cool completely before cutting
