Preheat your air fryer to 400°F (200°C) for 3 minutes.
In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until a smooth batter forms.
Toss the cauliflower florets in the batter, letting any excess drip off.
Place the coated florets in a single layer in the air fryer basket — don't overcrowd! Work in batches if needed.
Air fry for 12 minutes, flipping halfway through, until the batter is set and lightly golden.
While the florets cook, whisk together the buffalo sauce, melted butter, and honey in a bowl.
Remove the florets and toss them in the buffalo sauce mixture until fully coated.
Return them to the air fryer for another 5–6 minutes until the edges are crispy and caramelized.
Serve immediately with your favorite dipping sauce!
