Ingredients

For the batter:

  • 1 large head cauliflower cut into florets
  • ½ cup all-purpose flour
  • ½ cup milk or unsweetened almond milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper

For the buffalo coating:

  • cup buffalo hot sauce Frank's RedHot is my favorite
  • 2 tbsp melted butter
  • 1 tsp honey optional, to balance the heat

Instructions

  • Preheat your air fryer to 400°F (200°C) for 3 minutes.
  • In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until a smooth batter forms.
  • Toss the cauliflower florets in the batter, letting any excess drip off.
  • Place the coated florets in a single layer in the air fryer basket — don't overcrowd! Work in batches if needed.
  • Air fry for 12 minutes, flipping halfway through, until the batter is set and lightly golden.
  • While the florets cook, whisk together the buffalo sauce, melted butter, and honey in a bowl.
  • Remove the florets and toss them in the buffalo sauce mixture until fully coated.
  • Return them to the air fryer for another 5–6 minutes until the edges are crispy and caramelized.
  • Serve immediately with your favorite dipping sauce!
