Preheat your air fryer to 380°F (193°C) for about 3 minutes.
Pat your carrots dry with a paper towel — this helps them roast instead of steam.
In a large bowl, toss the carrots with olive oil, honey, garlic powder, salt, pepper, and smoked paprika until well coated.
Arrange the carrots in a single layer in the air fryer basket. Work in batches if needed — crowding is the enemy of caramelization!
Air fry for 12–15 minutes, shaking the basket halfway through, until the carrots are fork-tender and the edges are nicely caramelized.
Garnish with fresh parsley and an extra drizzle of honey if you like. Serve immediately and enjoy!
