Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 3 tablespoons almond butter
  • 1-2 tablespoons maple syrup
  • 1 teaspoon vanilla extract

For Layering

  • Fresh berries
  • Granola
  • Extra almond butter for drizzling
  • Coconut flakes optional

Instructions

  • In a bowl, whisk together almond milk, almond butter, maple syrup, and vanilla until smooth.
  • Stir in the chia seeds and whisk thoroughly for about 30 seconds.
  • Let the mixture rest for 10 minutes, then whisk again to break up any clumps.
  • Refrigerate overnight or for at least 3 hours.
  • When ready to serve, layer in a glass: chia pudding, berries, granola, and a drizzle of almond butter. Repeat layers.
