Almond Butter Banana Loaf

Ingredients

  • 3 ripe bananas mashed
  • 2 large eggs
  • 1/2 cup almond butter creamy or crunchy
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon optional
  • 1/2 cup chopped nuts or chocolate chips optional

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
  • In a large bowl, whisk together mashed bananas, eggs, almond butter, honey, melted coconut oil, and vanilla until smooth.
  • In another bowl, mix flour, baking soda, salt, and cinnamon.
  • Add dry ingredients to wet, stirring gently until just combined. Fold in nuts or chocolate chips if using.
  • Pour batter into the prepared loaf pan. Smooth the top.
  • Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
