Almond Flour Waffles

Ingredients

  • 2 cups almond flour fine blanched
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 4 large eggs
  • ½ cup unsweetened almond milk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Optional: keto sweetener to taste

Instructions

  • Whisk together eggs, almond milk, melted butter, and vanilla extract in a medium bowl until well combined.
  • In a separate bowl, combine almond flour, baking powder, and salt.
  • Add dry ingredients to wet ingredients and mix until just combined. Don't overmix - a few lumps are okay!
  • Preheat and grease your waffle iron well.
  • Pour about ⅓ cup batter per waffle and cook until golden brown and crispy.
