Avocado Tuna Salad Sandwich

Ingredients

  • 1 ripe avocado
  • 1 5 oz can tuna in water, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped red onion
  • 2 tablespoons chopped celery
  • Salt & black pepper to taste
  • 4 slices whole grain bread toasted, if you like
  • Lettuce leaves optional, for crunch

Instructions

  • In a medium bowl, mash the avocado until mostly smooth.
  • Add the tuna, mayonnaise, Dijon mustard, lemon juice, red onion, and celery. Mix until everything is well combined.
  • Season with salt and pepper to taste.
  • Pile the mixture onto two slices of bread. Top with lettuce, then the remaining bread slices.
  • Slice and serve immediately!
