Black Bean and Corn Salad

Ingredients

  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn fresh, canned, or thawed frozen
  • 1 red bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 avocado diced
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine black beans, corn, red bell pepper, red onion, and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  • Pour the dressing over the salad and toss gently.
  • Fold in the diced avocado just before serving.
  • Taste and adjust seasoning if needed. Serve chilled or at room temperature.
