Blueberry and Almond Overnight Oats

Toasted almonds and fresh berries crown these overnight oats, making each spoonful a perfect mix of smooth and crunchy.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup unsweetened almond milk
  • ½ cup blueberry or plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1 tablespoon almond butter
  • 2 teaspoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • teaspoon fine sea salt
  • ¾ cup fresh blueberries
  • 2 tablespoons sliced almonds

Instructions

  • In a mixing bowl, combine oats, almond milk, yogurt, chia seeds, almond butter, sweetener, vanilla, and salt. Give everything a good whisk until well combined.
  • Gently fold in the fresh blueberries.
  • Divide the mixture between two jars or containers.
  • Cover and refrigerate overnight or at least 4 hours.
  • Before serving, top with extra blueberries and sliced almonds.
