Ingredients

  • 2 flatbreads
  • 4 large eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup bacon cooked and diced
  • ½ cup fresh baby spinach
  • 1 tablespoon everything bagel seasoning
  • 2 tablespoons olive oil
  • Cherry tomatoes sliced (optional)
  • Fresh herbs for garnish

Instructions

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Brush the flatbreads with olive oil and arrange them on the baking sheet.
  • Sprinkle mozzarella cheese evenly over each flatbread.
  • Create small wells in the cheese for the eggs.
  • Carefully crack two eggs into the wells on each flatbread.
  • Add diced bacon, torn spinach pieces around the eggs.
  • Sprinkle everything bagel seasoning over the top.
  • Bake for 8-10 minutes until eggs reach desired consistency.
