Ingredients

  • 1 cup cooked quinoa cooled
  • 1 cup finely chopped broccoli steamed or blanched
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika optional
  • Olive oil or cooking spray for greasing

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line with cupcake or silicone liners.
  • In a large bowl, mix the quinoa, broccoli, cheddar, Parmesan, garlic, salt, pepper, and paprika.
  • Crack in the eggs and stir until everything is well combined. The mixture should hold together when pressed. If it feels too wet, add a little more breadcrumbs.
  • Spoon the mixture evenly into the muffin tin, pressing down gently to pack them in.
  • Bake for 18-20 minutes until the bites are golden and set. Let cool slightly before popping them out.
