In a small bowl, combine all the seasoning ingredients and set aside. This takes about 30 seconds and honestly smells incredible.
Heat olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and celery. Cook for about 5 minutes, stirring occasionally, until softened. Add the minced garlic and cook for another minute.
Add the ground chicken to the skillet, breaking it up as it cooks. Cook for about 7–8 minutes until no pink remains. Drain any excess liquid if needed.
Sprinkle your homemade Cajun seasoning over the cooked chicken and stir well to coat everything evenly.
Stir in the tomato sauce, tomato paste, Worcestershire sauce, apple cider vinegar, and brown sugar. Mix everything together until well combined.
Reduce heat to medium-low and let the mixture simmer for 10–12 minutes, stirring occasionally, until the sauce thickens up nicely and coats the chicken perfectly.
Give it a taste and add salt, pepper, or a pinch more cayenne if you want extra heat.
