Ingredients

For the Cajun Seasoning:

  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

For the Sloppy Joes:

  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 1 small yellow onion finely diced
  • 1 green bell pepper finely diced
  • 1 celery stalk finely diced
  • 3 cloves garlic minced
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • 4 brioche burger buns toasted

Instructions

  • In a small bowl, combine all the seasoning ingredients and set aside. This takes about 30 seconds and honestly smells incredible.
  • Heat olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and celery. Cook for about 5 minutes, stirring occasionally, until softened. Add the minced garlic and cook for another minute.
  • Add the ground chicken to the skillet, breaking it up as it cooks. Cook for about 7–8 minutes until no pink remains. Drain any excess liquid if needed.
  • Sprinkle your homemade Cajun seasoning over the cooked chicken and stir well to coat everything evenly.
  • Stir in the tomato sauce, tomato paste, Worcestershire sauce, apple cider vinegar, and brown sugar. Mix everything together until well combined.
  • Reduce heat to medium-low and let the mixture simmer for 10–12 minutes, stirring occasionally, until the sauce thickens up nicely and coats the chicken perfectly.
  • Give it a taste and add salt, pepper, or a pinch more cayenne if you want extra heat.
  • Spoon generously onto your toasted brioche buns and enjoy immediately!
