Ingredients

For the Dough

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 2 tablespoons erythritol
  • 3 cups shredded mozzarella cheese low moisture
  • 2 ounces cream cheese
  • 2 large eggs

For the Filling

  • 1/4 cup melted butter
  • 1/3 cup brown sugar substitute
  • 1 tablespoon cinnamon

For the Cream Cheese Frosting

  • 4 ounces cream cheese
  • 1/2 cup softened butter
  • 2 cups powdered sugar substitute
  • 1-2 tablespoons milk

Instructions

  • Whisk almond flour, baking powder, and sweetener in a bowl.
  • Microwave mozzarella and cream cheese in 20-second bursts until melted.
  • Combine melted cheese mixture with eggs and dry ingredients in a food processor until smooth.
  • Roll dough into a rectangle on a clean surface.
  • Spread melted butter, sprinkle brown sugar substitute and cinnamon.
  • Roll into a log and slice into 12 pieces.
  • Bake at 375°F for 20 minutes.
  • Mix frosting ingredients until smooth and spread over warm rolls.
