Ingredients

  • 2 large eggs
  • 2 oz cream cheese cubed
  • cup almond flour
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • ½ teaspoon cinnamon
  • 1 tablespoon water
  • Sweetener of choice ½ teaspoon stevia or equivalent

Instructions

  • Add all ingredients to a blender, starting with eggs, water, and cream cheese to prevent sticking.
  • Blend until completely smooth, then let the batter rest for 2-3 minutes.
  • Heat a non-stick skillet over medium heat.
  • Pour 3-4 tablespoons of batter for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown.
Servings: 8 pancakes
