Middle Eastern Beef Kofta Skewers

Ingredients

For the Kofta:

  • 1 lb ground beef 80/20 blend works great
  • 1/2 medium yellow onion grated
  • 3 garlic cloves minced
  • 3 tablespoons fresh parsley finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for brushing

  • 8 metal or wooden skewers soak wooden skewers 30 min beforehand

Instructions

  • Mix the meat: In a large bowl, combine the ground beef, grated onion, garlic, parsley, and all spices. Use your hands to mix everything thoroughly for about 2 minutes — you want the mixture well-blended and slightly sticky.
  • Shape the kofta: Divide the mixture into 8 equal portions. Mold each portion around a skewer, forming a long oval shape about 4–5 inches long. Press firmly so they hold together.
  • Chill: Place shaped skewers on a plate and refrigerate for at least 10 minutes. This helps them stay on the skewer during cooking.
  • Cook: Heat a grill, grill pan, or broiler to medium-high heat. Brush kofta lightly with olive oil. Cook for 12–15 minutes, turning every 3–4 minutes, until cooked through and nicely charred on the outside.
  • Rest & serve: Let the kofta rest for 2–3 minutes before serving.
