Mix the meat: In a large bowl, combine the ground beef, grated onion, garlic, parsley, and all spices. Use your hands to mix everything thoroughly for about 2 minutes — you want the mixture well-blended and slightly sticky.
Shape the kofta: Divide the mixture into 8 equal portions. Mold each portion around a skewer, forming a long oval shape about 4–5 inches long. Press firmly so they hold together.
Chill: Place shaped skewers on a plate and refrigerate for at least 10 minutes. This helps them stay on the skewer during cooking.
Cook: Heat a grill, grill pan, or broiler to medium-high heat. Brush kofta lightly with olive oil. Cook for 12–15 minutes, turning every 3–4 minutes, until cooked through and nicely charred on the outside.
Rest & serve: Let the kofta rest for 2–3 minutes before serving.
