Ingredients

  • 2 large whole eggs + 1 egg white
  • 2 tablespoons almond flour
  • 4 tablespoons coconut flour
  • 1 scoop protein powder vanilla works great
  • 1-2 tablespoons sweetener
  • ½ teaspoon vanilla extract
  • ounces heavy cream
  • 3 ounces cream cheese
  • teaspoons baking powder
  • ¼ teaspoon salt

Instructions

  • Preheat your oven to 350°F/176°C
  • Mix all ingredients in a bowl until smooth
  • Spray a mini muffin pan with non-stick cooking spray
  • Pour the mixture into the muffin cavities
  • Bake for 10-15 minutes until golden
