Spinach and Cheese Omelette

Spinach and Cheese Omelet 2

Ingredients

  • 2-3 large eggs
  • 1 cup fresh baby spinach
  • 2 tablespoons gouda or feta cheese
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  • Beat the eggs with a pinch of salt until smooth
  • Melt butter in a non-stick pan over medium heat
  • Pour in the beaten eggs
  • Once the eggs begin to set, add the cheese and spinach on one half
  • Cover with a lid and reduce heat to low
  • Cook for about 1 minute until the eggs are set but still slightly glossy on top
  • Fold the empty half over the filling using a spatula
  • Serve immediately
