Tomato Mozzarella Sandwich
Slices of mozzarella and tomato, layered with basil and olive oil on toasted bread, make a fresh, satisfying sandwich ready in just 15 minutes.

slices
fresh crusty bread
ciabatta or sourdough is lovely
1
large ripe tomato
sliced
4
oz
fresh mozzarella
sliced
A handful of fresh basil leaves
2
tbsp
extra virgin olive oil
1
tsp
balsamic glaze
optional, but highly recommended
Salt and freshly ground black pepper
Instructions
Drizzle each slice of bread with a little olive oil. If you like, toast the bread lightly for extra crunch.
On two slices, layer mozzarella, tomato, and basil leaves. Sprinkle with salt and pepper.
Drizzle with a bit more olive oil and a touch of balsamic glaze.
Top with the remaining bread slices. Press gently, slice in half, and serve immediately.
