Tomato Mozzarella Sandwich

Tomato Mozzarella Sandwich

Ingredients

  • 4 slices fresh crusty bread ciabatta or sourdough is lovely
  • 1 large ripe tomato sliced
  • 4 oz fresh mozzarella sliced
  • A handful of fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tsp balsamic glaze optional, but highly recommended
  • Salt and freshly ground black pepper

Instructions

  • Drizzle each slice of bread with a little olive oil. If you like, toast the bread lightly for extra crunch.
  • On two slices, layer mozzarella, tomato, and basil leaves. Sprinkle with salt and pepper.
  • Drizzle with a bit more olive oil and a touch of balsamic glaze.
  • Top with the remaining bread slices. Press gently, slice in half, and serve immediately.
