Zucchini Pizza Bites
Bite-sized pizzas on zucchini rounds bring the fun to snack time! I whipped these up for a family movie night and they disappeared in minutes—no crust, no fuss, just pure cheesy, saucy joy.
Everyone gets their own little pizza, and cleanup is a breeze. If you’re looking for a playful, lighter way to enjoy pizza flavors, give these a try!

Variations & Substitutions
If you want to shake things up, try swapping pepperoni for cooked crumbled sausage or diced ham. For a spicy kick, add a few red pepper flakes before baking.
Prefer a different cheese? Provolone or cheddar melts beautifully too. You can even use a store-bought marinara or barbecue sauce for a fun flavor twist.

Tips & Tricks for Perfect Results
To avoid soggy bites, slice your zucchini evenly and don’t skip the pre-bake step. Brushing with olive oil helps them roast, not steam.
For extra crispiness, use a wire rack on your baking sheet. Don’t overload with sauce—just a dab will do.

Storage & Reheating
Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop them in a toaster oven or air fryer at 375°F for 3–4 minutes—this keeps them crisp. Avoid microwaving, as it can make them a bit limp.
If you want to freeze, assemble and freeze before baking, then bake straight from frozen, adding a couple of extra minutes.
