Ingredients

  • 2 medium zucchinis sliced into ½-inch thick rounds
  • ½ cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 16 slices pepperoni or your favorite pizza meat
  • 1 tablespoon olive oil
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  • Preheat & Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Arrange: Lay zucchini rounds on the baking sheet. Brush lightly with olive oil and sprinkle with salt, pepper, and Italian seasoning.
  • Bake: Bake for 5 minutes to soften.
