Preheat & Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Arrange: Lay zucchini rounds on the baking sheet. Brush lightly with olive oil and sprinkle with salt, pepper, and Italian seasoning.
Bake: Bake for 5 minutes to soften.
Top: Remove from oven. Spoon a little pizza sauce onto each round, sprinkle with cheese, and top with a slice of pepperoni.
Bake Again: Return to the oven for 8–10 minutes, until cheese is bubbly and golden.
Serve: Let cool for a minute, then garnish with fresh herbs if you like. Enjoy warm!
