Zucchini Pizza Bites

Ingredients

  • 2 medium zucchinis sliced into ½-inch thick rounds
  • ½ cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 16 slices pepperoni or your favorite pizza meat
  • 1 tablespoon olive oil
  • ½ teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Preheat & Prep: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • Arrange: Lay zucchini rounds on the baking sheet. Brush lightly with olive oil and sprinkle with salt, pepper, and Italian seasoning.
  • Bake: Bake for 5 minutes to soften.
  • Top: Remove from oven. Spoon a little pizza sauce onto each round, sprinkle with cheese, and top with a slice of pepperoni.
  • Bake Again: Return to the oven for 8–10 minutes, until cheese is bubbly and golden.
  • Serve: Let cool for a minute, then garnish with fresh herbs if you like. Enjoy warm!
