Mediterranean Tuna Salad

Ingredients
- 2 cans 5 oz each tuna in olive oil, drained
- 1 cup cherry tomatoes halved
- 1/2 cup cucumber diced
- 1/4 cup red onion thinly sliced
- 1/3 cup Kalamata olives pitted and halved
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley chopped
- 2 tbsp extra-virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, add the tuna, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and gently toss everything together. Taste and adjust seasoning if needed.
- Serve immediately or chill for 10 minutes for even more flavor.
