Ingredients

  • 2 medium zucchinis
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • Cooking spray

Instructions

  • Prep the Zucchini: Slice the zucchinis into fry-shaped sticks, about ½-inch thick.
  • Set Up Breading Stations: In one bowl, mix flour, salt, and pepper. In a second bowl, beat the eggs. In a third bowl, combine panko, Parmesan, garlic powder, and Italian seasoning.
  • Coat the Fries: Dredge each zucchini stick in flour, dip into the eggs, then roll in the breadcrumb mixture. Press gently so the coating sticks.
  • Arrange in Air Fryer: Spray the air fryer basket with cooking spray. Place zucchini fries in a single layer (work in batches if needed). Lightly mist the tops with more spray.
  • Air Fry: Cook at 400°F for 10-12 minutes, flipping halfway, until golden and crispy.
  • Serve: Enjoy hot with your favorite dipping sauce!
