Buffalo Chicken Lettuce Wraps

Ingredients

  • 2 cups cooked chicken breast shredded (rotisserie chicken is great)
  • 1/3 cup Buffalo wing sauce
  • 2 tablespoons ranch or blue cheese dressing
  • 1 tablespoon unsalted butter melted
  • 1/2 cup shredded carrots
  • 1/2 cup finely diced celery
  • 1/4 cup crumbled blue cheese optional
  • 8 large butter lettuce leaves or romaine
  • Chopped chives or green onions for garnish

Instructions

  • In a large bowl, combine the Buffalo wing sauce and melted butter.
  • Add shredded chicken to the sauce, tossing until every piece is coated.
  • Lay out the lettuce leaves. Fill each with a generous scoop of Buffalo chicken. Top with carrots, celery, a drizzle of ranch or blue cheese dressing, and crumbled blue cheese if you like.
