Easy Cilantro Lime Rice

Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil or butter
  • 1 teaspoon salt
  • 1 lime zest and juice
  • ½ cup fresh cilantro chopped

Instructions

  • In a medium saucepan, combine rice, water, olive oil, and salt. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed and rice is tender.
  • Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • Stir in lime zest, lime juice, and chopped cilantro. Give it a good toss so every grain gets coated in that citrusy, herby goodness. Spoon into bowls and enjoy warm!
