Garlic Parmesan Chicken Skewers

Garlic Parmesan Chicken Skewers

Ingredients

  • 1 ½ lbs boneless skinless chicken breasts, cut into 1-inch cubes
  • 3 tbsp olive oil
  • 4 garlic cloves minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup grated Parmesan cheese plus extra for serving
  • 2 tbsp chopped fresh parsley optional
  • Lemon wedges for serving
  • Wooden or metal skewers

Instructions

  • Marinate the Chicken: In a large bowl, whisk together olive oil, minced garlic, Italian seasoning, salt, and pepper. Add the chicken cubes and toss to coat. Cover and marinate in the fridge for at least 30 minutes (up to 2 hours for more flavor).
  • Prepare Skewers: If using wooden skewers, soak them in water for 20 minutes to prevent burning. Thread the marinated chicken onto the skewers.

Grill or Bake:

  • Grill: Preheat grill to medium-high. Grill skewers for 8–10 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  • Oven: Preheat oven to 425°F (220°C). Place skewers on a lined baking sheet and bake for 15–18 minutes, turning halfway, until golden and cooked through.
  • Finishing Touch: Immediately sprinkle hot skewers with Parmesan cheese and chopped parsley. Serve with lemon wedges and extra Parmesan.
