Healthy Greek Yogurt Parfait

This Greek Yogurt Parfait layers creamy honey-cinnamon yogurt with fresh berries, crunchy granola, chia seeds, and almonds for a protein-packed, no-cook breakfast ready in ten minutes.

Ingredients

  • 3 cups plain full-fat Greek yogurt
  • 3 tablespoons honey or to taste
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 cups fresh mixed berries strawberries, blueberries, raspberries
  • 1 cup granola homemade or store-bought without added sugar
  • 2 tablespoons chia seeds
  • 2 tablespoons sliced almonds
  • Fresh mint leaves for garnish (optional)

Instructions

  • Start by grabbing a medium mixing bowl and adding your Greek yogurt, honey, vanilla extract, and ground cinnamon. Give everything a really good stir until it's well combined and that cinnamon is evenly distributed throughout. Taste it at this point and adjust the honey if you want things a little sweeter.
  • Wash and prep your berries now if you haven't already. If you're using strawberries, slice them into bite-sized pieces so they layer nicely. Pat everything dry with a paper towel so excess moisture doesn't water down your yogurt layer.
  • Now for the fun part — the assembly! Grab four glasses or bowls and add a few spoonfuls of the yogurt mixture to the bottom of each one. You're going for a generous layer here, about three to four tablespoons worth.
  • Sprinkle a layer of granola over the yogurt, followed by a generous handful of your fresh mixed berries. Add another layer of yogurt on top of that, pressing down very gently with your spoon.
  • Repeat the layering process one more time so you end up with two full layers in each glass. Finish each parfait off with a final scattering of granola, a few extra berries, your chia seeds, and those sliced almonds on the very top.
  • If you're serving these right away, add a sprig of fresh mint on top for a little pop of color and freshness. Serve immediately and enjoy every single bite!
