Start by grabbing a medium mixing bowl and adding your Greek yogurt, honey, vanilla extract, and ground cinnamon. Give everything a really good stir until it's well combined and that cinnamon is evenly distributed throughout. Taste it at this point and adjust the honey if you want things a little sweeter.
Wash and prep your berries now if you haven't already. If you're using strawberries, slice them into bite-sized pieces so they layer nicely. Pat everything dry with a paper towel so excess moisture doesn't water down your yogurt layer.
Now for the fun part — the assembly! Grab four glasses or bowls and add a few spoonfuls of the yogurt mixture to the bottom of each one. You're going for a generous layer here, about three to four tablespoons worth.
Sprinkle a layer of granola over the yogurt, followed by a generous handful of your fresh mixed berries. Add another layer of yogurt on top of that, pressing down very gently with your spoon.
Repeat the layering process one more time so you end up with two full layers in each glass. Finish each parfait off with a final scattering of granola, a few extra berries, your chia seeds, and those sliced almonds on the very top.
If you're serving these right away, add a sprig of fresh mint on top for a little pop of color and freshness. Serve immediately and enjoy every single bite!
